Homemade Granola
Over the weekend I was challenged to go the next 30 days without consuming any processed sugar (i.e. white sugar, brown sugar or corn syrup, etc.). Sugar is in practically everything we eat, especially if you eat a lot of processed foods or if you eat out a lot. One of my favourite things to eat in the morning is plain yogurt and granola. Because of this challenge, I’ve decided to make my own. I am allowed to use honey and used honey to sweeten my granola. I took honey, diluted it in some hot water (3/4 cup of honey and 1 cup of hot water). I then tossed in rolled oats – I would use large oat flakes as it doesn’t crumble when baked. I added almonds and pecans and then spread the mixture on a baking sheet and baked it in a 350 degree F oven for 20 minutes or until golden brown. To top it off, I then mixed in raisins and dried cranberries. It turned out deliciously yummy – and to think, it was so easy to make and all natural!
